Direct and indirect cooking:

Direct cooking: You can grill meat while retaining its natural juices and get tender and flavorful dishes. Simply place the food over the heat source and adjust the temperature according to the type of food.

Indirect cooking: It involves roasting food as in your kitchen oven, perfect for poultry, game meats, and delicate dishes like fish or vegetables. Just lower the barbecue’s temperature to a minimum and close the lid. The heat circulates as if it were a rotisserie oven, cooking the food evenly.
